Ingredients
For the cookies:
• 1 cup (2 sticks) unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• ½ cup unsweetened cocoa powder
• ½ tsp baking powder
• ¼ tsp salt
For the frosting:
• 1 cup powdered sugar
• 1-2 tbsp milk
• ½ tsp vanilla extract
• ½ cup crushed peppermint bark or candy canes
Instructions
Make the cookies:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla, mixing until smooth.

Prepare frosting & assemble cookies:
