Julii Dinner Rolls

New North Bethesda dining destination, Julii, is already receiving big buzz. So it’s no surprise that the Levantine-French-inspired bistro – a passion project housed in a glass jewel box at the center of Pike & Rose by Cava founders Ike Grigoropolous, Dimitri Moshovitis, and Ted Xenohristos – was named one of January’s best new restaurant openings by both Eater DC and Thrillist.

We asked Julii’s manager Nevena Dzhundzhurova and her team to share exactly how they start every meal –with a basket full of warm Julii dinner rolls—and we’re sharing the recipe so you can create it at home.

JULII DINNER ROLLS

Ingredients:

  • 1 packets – Instant Yeast
  • 40g Honey
  • 2 Eggs
  • 4 oz Butter
  • 32 oz (4cups) Warm Milk
  • 1420 g (11cups) All Purpose Flour
  • 30g Salt
  • Butter
  • Egg Wash
  • Seasoning/Coarse Salt

Prep:

  1. Combine warm water, sugar and milk and bring to about 115 degrees F. Stir in yeast and let bloom 3-4 mins.
  2. Place flour and salt in mixer and mix with dough hook adding liquid slowly for 1 minute.
  3. Mix on medium for 10-12 minutes or until smooth.
  4. Remove from mixer and place in a container to rise.

Baking Instructions:

  1. Form into 50g balls close together on a baking tray.
  2. Allow to rise until about double in size.
  3. Spread soft butter overtop, generously and cover with whatever topping you desire.
  4. Bake in a 350F low fan oven for 10 minutes, then rotate, and cook another 6 minutes. Spray 1T of water into oven when you place them in.
  5. Remove and allow to cool as gently as possible.

Julii is open for coffee (10am-5pm) and lunch (11:30am-2:30pm), Monday-Friday, and open for dinner Sunday-Saturday, 5-Xpm. Brunch begins on Saturday, February 2, 10am-4pm, and will run Saturdays and Sundays, 10-3pm. Book your reservation at Julii HERE.
